Q: What do rose petals, pomegranates, fresh fragrant herbs, saffron, turmeric & sumac have to do with each other? A: They all come together in the alluring dishes of Persia, the fantastical cuisine that America’s cooks & chefs are taking into their hearts--& their kitchens. Nina June is thrilled to welcome Louisa Shafia, noted American chef, a food-writer with deep family roots in Iran, for a spectacular hands-on cooking class--two actually, one on August 15th, repeated on the 16th. Louisa’s bright, colorful take on Persian cuisine, detailed in her award-winning book, The New Persian Kitchen, is a mix of time-honored favorites & fresh takes on ancient flavors. Each evening we’ll explore the cuisines of Iran, both ancient & modern, exotic ingredients & challenging techniques. And we’ll learn to craft a dazzling tahdig, the delectable crunchy rice at the bottom of the pot, one of Iran’s most famous dishes. Together we’ll create a tableful of dishes for a summer feast--& then sit down to enjoy it with Louisa in Nina June’s summery dining room.
