Full Time at Samoset Resort in Rockport, ME

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned. • Prepare items as required to recipe card with accuracy speed and “clean as you go” policy. • Follow all policies, procedures and kitchen rules and regulations as outlined in the associates handbook. • Prepare mise-en-place for station and meal period. Assist other cooks as needed. Set-up, restock and maintain food preparation areas. • Serve all menu items with proper plate presentation and attention to detail. • Attend all kitchen meetings as directed. • Comply with “quality and food safety standards”. • Ensure that all food items are on hand for appropriate meal periods. • Date all food containers and rotate as per the SOP following the FIFO policy. • Making sure all perishables are kept at proper temperatures and stored properly. • Assist in setting up plans and action to correct any food cost problems; control food waste, loss and usage. • To assist in follow through of spoiled product and portion control. • Assist with all banquet dish-ups, carving and pre-dish preparation. • Flexibility in availability to work according to business needs, including early mornings, nights, weekends and holidays. • Provide leadership on the line in assistance to Sous Chef, Executive Sous Chef, Executive Chef, Banquet Chef and/or Pastry Chef. QUALIFICATION REQUIREMENTS: EDUCATION and/or EXPERIENCE: High school diploma or general education degree (GED); or five years related experience and/or training; or equivalent combination of education and experience. Food Safety Handlers Certification – thus providing all the rules of the kitchen and food prep, preventing food contamination, knowledge of ways to prevent Food Borne Illnesses.
